As I continue to clean, sort through our belongings and prepare for this move (less than a week away, yikes!), I stop to cook or find something for my family to eat. Our pantry is dwindling down and we only have a few ingredients left in our cupboards, fridge and freezer.
Fortunately, I still had everything to make this awesome Curry Chicken Salad recipe that my friend Jill gave me months ago. (Thanks Jill, you rock!) Now I never want to eat chicken salad any other way. The curry powder used in it gives it a kick, not spicy, but just full of flavor. I make it healthier by using light or even fat-free mayonaise. You can do this since the curry powder and onion powder make it a tasty dish.
This is the perfect meal for my family to eat over the next few days as we continue to pack and empty out our rent house before the Florida move. Of course I had to take just a few minutes to stop, snap photos and type up this great recipe for you.
Why should I enjoy this all to myself? You must try it. You won't be disappointed!
Curry Chicken Salad
3 chicken breasts (I use boneless kind but you can use the bone too)
3/4 cup of Mayo (I have used both fat-free and light kind. Both are fine)
1 large apple, chopped to your desired size
1 stalk celery, sliced thin
1/2 cup of grapes, halved
2 tbsp lemon juice
1 tbsp curry powder -- this is the most important ingredient. Make sure you have this on hand~!
2 tsp onion powder
salt and pepper to taste
Boil your chicken breasts for 15-20 minutes, until no longer pink. Let cool until you can handle it. Or you can run cool water over it for a few minutes. Pull chicken apart (or off of bone) and shred/chop into small pieces. Mix the mayo, celery, lemon juice, curry, onion and salt and pepper in bowl or container. Add the chicken, apples, celery and grapes. Mix all ingredients well. Refrigerate for at least 2 hours before serving. (Sometimes I eat it at room temperature. It's too good to wait~!)
Serve with crackers or on sandwich bread, croissants or even within lettuce wraps.
Chef's Note: You will notice that the color of the chicken salad will have a yellow tint to it. This is from the curry powder and it is normal. It may look a bit strange at first. People may ask you if you put mustard in it. But don't let that scare you. It's delicious!!!

Aww, Mandy, I'm so glad you like the chicken salad! It's a staple in my house. I can't believe your moving so soon! J, R, and I will have to make a road trip once you're settled. I'm going to miss you so much!
