Soda Cake Recipe

Although I am trying to slim down and become healthier, I still have a sweet tooth. I often crave some sort of dessert treat.

Several of my former co-workers are following the Weight Watchers diet. One colleague shared this soda cake recipe with me. I made it this afternoon in between cleaning and doing laundry - a treat for myself for doing all those household chores.

This recipe is the simplest one I have ever made as far as baking goes. All you need is a cake mix box and a soda (10 oz). The recipe calls for diet soda but since I didn't have a diet cola, I took Kirk's last Sierra Mist (he normally uses to accompany his Crown Royal whiskey. Sorry babe!)

Soda cake doesn't require a particular type of batter or soda. Therefore you can improvise, use what you have in your pantry and change it up frequently.

Here is what I had in stock (below):

Directions:

Mix the dry cake mix with the diet soda. (Do not use the egg or oil listed
on the box). Spray a 9 x 12 cake pan (or cupcake tin) with non-stick spray and
bake according to package instructions.

Pour (or spoon) into greased cake pan:

Note: It will be less batter and not as tall as a normal cake batter with eggs and oil would be.

This particular funfetti cake mix only required 30 minutes of baking at 350 degrees.

Once the cake is cool, put whatever icing you want on it.

Trying to keep it healthy, I chose this cool-whip topping:

If you have children or you are bringing this treat to a Halloween party, it would be fun to decorate the top or make a jack-o-lantern face on the cake. Since this was just for Kirk, Vivian and me, I kept ours simple.

The verdict: The cake was very moist. Its consistency was very similar to an angel food cake. So if you like that type of dessert, then you'll enjoy this recipe.

Bakers tip: If you are following the weight watchers diet, you have to figure your points from the cake mix you use. Multiply the nutritional info on the box by the number of servings the box says you get (usually 12). Then divide by the actual number of pieces you cut or cupcakes you make. The points will vary widely depending on how much fat is in your cake mix.

My whole family loves those diet soda cakes. My youngest's fav is a lemon cake mix with Dt. Mountain Dew. I like chocolate with Diet Cherry Dr Pepper. Crap! Now I'm hungry.

Omg, this looks divine. I have the worst sweet tooth and am always looking for low-calories cake and cookie recipes to provide me sustenance. I've never heard of adding soda to cake mix, but it sounds groovy, and it's gotta be better than eggs/oil. :D
