Yes, Chili Fritos with cheese is a STAPLE in my house. You simply always have a can of Hormel chili (turkey with beans) on hand. Open it up. Heat it. Spread it over a bowl full of frito chips. Then add cheese! It's a trip to the state fair but at your own home. All that's missing is the funnel cake and the crazy people watching! :-P

Cathy - Smashed potatoes is what I call my last stitch effort to make potatoes. I heat about three in the microwave until they are done (fork goes through them easily). Then I smash them down with the skins still on, add butter, garlic, cheese and whatever else I want. I don't do anything fancy - but I use my largest utensil (mallot) to literally smash them into mashed potatoes. I hope that makes sense. Just come on down for a visit and I'll show you! :)
